- 4 large flour tortillas or wraps (10-inch)
- 3/4 cup Oolie Beet Dip
- 8 slices deli turkey
- 4 slices cheese, dairy-free or regular
- 1 cup baby spinach
- 1 cup sprouts or shredded lettuce
- 3/4 cup shredded carrots
- 1/2 medium cucumber, thinly sliced
- 1/4 tsp black pepper
Instrucciones
Step 1: Stack the tortillas and microwave for about 10 seconds, or warm briefly in a dry pan. Warm tortillas roll without cracking, which matters most for a lunchbox that needs to survive the morning.
Step 2: Spread the Oolie Beet Dip across each tortilla in an even layer, going to the edges but leaving about an inch bare along the far edge to seal the roll. This one step replaces mayo, cream cheese, and hummus—nothing else needed.
Step 3: Lay the cheese down first, then the turkey over it, keeping everything in the middle third of the tortilla. Add a grind of black pepper.
Step 4: Pile the spinach, sprouts or lettuce, carrots, and cucumber in a tight line across the center. Keep it slim rather than overstuffed—a slim wrap rolls cleanly and slices into a proper spiral.
Step 5: Fold in the two short sides, then roll away from you as tightly as you can, finishing seam-side down. Wrap each roll snugly in parchment or plastic and refrigerate for at least 20 minutes to firm up before slicing.
Step 6: Trim the ragged ends, then cut each wrap in half for a lunchbox or into 1-inch pinwheels for a snack tray. Pack with extra beet dip on the side for dipping.
