Garlic and Herb Chicken Pot Pie
Ok, so we aren’t into trying to prove we can “do it all” anymore. But heck, this weeknight chicken pot pie is so easy, it sure makes it look like you can. The prep takes minutes, and you can nourish your family with something super-tasty and still spend time with everyone in those precious minutes between when you get home and when those kiddos need to get snuggled into bed.

Ingredients
- 3 Cups cooked chopped chicken
- 1 Cup frozen veg e.g. carrots and peas
- 2 x 8oz. Containers Oolie Garlic and Herb Dip
- ½ Cup water
- 1 Sheet ready-made puff pastry, thawed.
- 2 x Egg yolks
Instructions
- Preheat the oven to 400°F.
- Mix the chicken, vegetables (no need to thaw), Oolie Garlic and Herb Dip, and water in a deep 9-inch pie dish.
- Cover the pie with the thawed puff pastry. You can get as fancy or simple as you like with this: From laying the whole square directly, as is, over the dish, to scoring the pastry, to cutting and layering decorative squares. Just be sure to leave or cut a hole for steam to escape as it bakes.
- Use a pastry brush to mix up the egg yolks and paint the top of the pastry.
- Bake for 35- 40 minutes until the pastry is golden brown.
