Key Lime and Coconut Trifle

Can you get a better marriage than creamy coconut, zesty lime, and crunchy graham crumb? I think not. Choose a margarita mix with minimal additives and enjoy the convenience of the zingy flavor it adds. Choose any lovely glasses you like for these to highlight the layers – aim for 8-10oz. capacity. The textures and layers of this trifle are a beauty to behold and a delight to eat – Enjoy it while knowing there is nourishment in every bite!

Ingredients

  • 1 ¼ Cup Margarita drink pre-mix
  • 2 ½ Tablespoons corn starch
  • 4 x 5.3oz. Containers Oolie Key Lime Yogurt
  • ¾ Cup crushed graham crackers
  • 1 Cups coconut whipped topping
  • (Optional garnish) Zest of a lime and ½ Cup of toasted coconut flakes

Instructions

  1. Make the lime sauce: in a small saucepan, whisk the margarita premix and cornstarch over medium heat until it thickens. Leave to cool in the fridge with a layer of parchment paper pressed against the surface to prevent skin from forming.
  2. To assemble the trifle, build each of the little trifles from the bottom up, splitting the ingredients between 4 serving glasses:
    1. Bottom layer Graham cracker crumbs.
    2. Oolie yogurt – half a container per glass.
    3. A thin layer of cooled lime sauce, around 3 tablespoons per glass.
    4. Another layer of crumbs.
    5. Oolie lime yogurt – half a container per glass.
    6. A little more lime sauce – split the rest of the sauce between the glasses.
    7. Top each glass with ¼ cup of coconut whipped topping.
  3. Garnish with Lime zest, toasted coconut flakes, or simply just a last sprinkle of Graham cracker crumb.
  4. Keep refrigerated until you are ready to serve as the coconut topping melts very quickly.
