Bananas Foster Crepes

This could be dessert, but it’s so darn good for you, that you can serve it up for breakfast. Get your energy and protein fix and start the day off on the sweet side. This delicious plate riffs on bananas foster, with rich buttery vanilla pecan caramel, without the dairy or alcohol.

Ingredients

  • 1 ½ Cups (180g) all-purpose flour
  • 3 Eggs
  • 1 ¼ Cups coconut milk
  • ¾ Cup water (approx.)
  • 2 Tablespoons neutral oil + more for the pan
  • 1 Tablespoon sugar
  • 3 Tablespoons plant-based spread
  • ½ Cup brown sugar
  • 1 Teaspoon vanilla extract
  • ½ Teaspoon ground cinnamon
  • Pinch of salt
  • 4 Slightly under-ripe bananas
  • ¼ Cup pecans, chopped
  • 4 x 5.3oz Containers Oolie Banana Cream Yogurt

Instructions

  1. Prepare the crepe batter by whisking together the flour, eggs, 1 cup of coconut milk, oil, and water (a little at a time) until the batter is the consistency of melted ice cream. 
  2. Heat about a teaspoon of oil in a shallow 9-inch non-stick pan on a medium heat.
  3. Cook the crepes by adding ¼ cup of batter at a time to the hot pan and tilting the pan to spread the batter evenly. After about a minute or so, the surface will start to look dry and the edges will start to lift – time to flip and cook for 30 more seconds to get some color on the other side.
  4. Keep the cooked crepes under a clean dishtowel so they do not dry out. You should get around 12 crepes from the mix, oiling the pan as needed.
  5. To prepare the bananas fosters– melt 3 tablespoons of plant-based spread in a second pan. Stir in the sugar, vanilla extract, the remaining ¼ cup of coconut milk, cinnamon, and a pinch of salt, and turn up the heat to high.
  6. Let the sugar caramelize while stirring frequently as it bubbles to emulsify the ingredients and turn it into caramel.
  7. Slice the bananas and add to the pan along with the chopped pecans and cook for 2 minutes. Turn off the stove at this point. The bananas should be served immediately as they will continue to soften as they stand in the warm sauce.
  8. To build the finished plate – spread a generous amount of Oolie yogurt on a crepe and fold it into quarters. Top the pancake with the bananas and caramel sauce and dig in!
