The whole thing comes together in one pan in about five minutes—coconut sugar and coconut oil caramelize quickly, the bananas go in cut-side down and come out golden and glossy, and the vanilla and rum turn the whole thing into a sauce that smells like a restaurant dessert. The trick is what’s underneath.

Ingredients
- 2 Cups Oolie Banana Cream Yogurt
- 2 Small ripe bananas, sliced into coins
- 2 tbsp coconut sugar or brown sugar
- 1 tbsp coconut oil
- ¼ tsp cinnamon
- 1 tsp vanilla extract
- 1 tbsp dark rum (optional)
- GF Cookie crumbles of choice, to top
- Pinch of flaky salt
Instructions
Set up the yogurt base: Divide the Oolie Banana Cream Yogurt evenly between two bowls and spread into a thick base. Place in the fridge to stay cold while you make the bananas.
Start the caramel: Melt coconut oil in a skillet over medium-high heat. Add coconut sugar and cinnamon and stir together for about 30 seconds until bubbling and fragrant.
Caramelize the bananas: Add the banana coins in a single layer and cook undisturbed for 1–2 minutes until deeply golden on the bottom. Gently flip and cook 1 minute more.
Finish the sauce: Add vanilla extract and rum if using. Swirl the pan gently for 30 seconds to combine into a glossy sauce. Remove from heat.
Assemble and serve: Pull the cold yogurt bowls from the fridge. Spoon the warm bananas and pan sauce over the top. Finish with GF cookie crumbles, and a pinch of flaky salt. Serve immediately.
