Herby Tuna and Lentil Salad with Red Pepper Dressing

Ingredients
- 2.5 oz. Oolie Spicy Pepper Dip
- 3-4 Tablespoons water
- Juice and zest of a lemon
- 2 Tablespoons olive oil
- 1 x 15 Oz. Can French lentils, rinsed and drained
- 1 Can solid tuna in water, drained
- 1 Oz. Flat leaf parsley (or any tender-leaf fresh herbs), finely chopped
- Salt, ground black pepper and a sprinkle of paprika
Instructions
- In a small pitcher, whisk together the Oolie red pepper dip with a little water to create the consistency of ranch dressing.
- In a salad bowl, toss together the lentils, tuna, olive oil, lemon juice, zest and parsley.
- Season with salt and pepper to taste.
- Drizzle over the Oolie Red pepper dressing and serve!
