Herby Tuna and Lentil Salad with Red Pepper Dressing

Make ahead lunch alert, girl dinner for days, and so-much-protein! This is a lunch that’ll keep you full and happy, but is still light and refreshing. Go wild with the tender fresh herbs you use, honestly, anything will taste amazing with this combo. It’s the kind of meal that makes you feel like you’ve got your life together.

Ingredients

  • 2.5 oz. Oolie Spicy Pepper Dip
  • 3-4 Tablespoons water
  • Juice and zest of a lemon
  • 2 Tablespoons olive oil
  • 1 x 15 Oz. Can French lentils, rinsed and drained
  • 1 Can solid tuna in water, drained
  • 1 Oz. Flat leaf parsley (or any tender-leaf fresh herbs), finely chopped
  • Salt, ground black pepper and a sprinkle of paprika

Instructions

  1. In a small pitcher, whisk together the Oolie red pepper dip with a little water to create the consistency of ranch dressing.
  2. In a salad bowl, toss together the lentils, tuna, olive oil, lemon juice, zest and parsley.
  3. Season with salt and pepper to taste.
  4. Drizzle over the Oolie Red pepper dressing and serve!
