Curried Chicken Salad
This gloriously creamy curried chicken salad, also known as “Coronation chicken” if you’re feeling fancy, was originally created for the Queen of England’s coronation. But it definitely deserves a place in your everyday rotation. Fragrant curry spices, tender chicken, and that signature Oolie smoothness that’ll make you feel pretty regal. No crown required.

Ingredients
- 1x 8oz. Container Oolie Yellow Curry Dip
- 2.5 Cups cooked, shredded chicken
- ½ Cup mayonnaise
- ½ Cup raisins (Trust us!)
- ¼ Cup sliced almonds, toasted
- 2 Sticks celery, finely sliced
- 12 Slices sourdough bread
- Butter lettuce (optional)
Instructions
- Toast the almonds in a small frying pan until golden brown (watch them carefully, they burn easily!).
- Mix all ingredients in a bowl, except the bread and lettuce, if using.
- Split the mixture between 6 of the bread slices, top with another slice and serve.
