Ingredients
1 block extra-firm tofu, pressed and torn into chunks
½–¾ cup Oolie Red Beet Bliss Dip
1 cup cooked wild rice
1 cup cherry tomatoes, chopped
1 cup cucumber, chopped
1 ripe avocado, sliced
Fresh basil leaves
Olive oil
Kosher salt
Instructions
- Bake the tofu: Preheat oven to 425°F. Toss tofu with Oolie Red Beet Bliss until coated. Spread on a lined sheet pan and bake 25–30 minutes, flipping once, until crisp at the edges and glazed.
- Prep the bowl base: Warm the wild rice if needed. Toss tomatoes and cucumber lightly with a pinch of salt.
- Assemble: Divide wild rice between bowls. Top with crispy beet-glazed tofu, tomato-cucumber salad, avocado slices, and fresh basil.
- Finish: Drizzle with olive oil if desired and serve warm or at room temperature.
