Garlic & Herb Creamy White Bean Soup + Sourdough

Ingredients

  • 2 (15-oz) cans white beans, drained and rinsed
  • ¾ cup Oolie Garlic & Herb Dip
  • 2½ cups bone broth or vegetable broth
  • Olive oil, for finishing
  • Kosher salt, to taste
  • Sourdough bread (or GF bread), toasted, for serving

Instructions

  1. Simmer: Add white beans, Oolie Garlic & Herb, and broth to a pot over medium heat. Bring to a gentle simmer and cook 5–7 minutes, until warmed through.
  2. Blend: Use an immersion blender (or carefully transfer to a blender) and blend until completely smooth and creamy.
  3. Season: Taste and add salt if needed.
  4. Serve: Ladle into bowls, finish with a drizzle of olive oil, and serve with toasted sourdough on the side.
